William Catcheside went above and beyond with this forged geometry sujihiki. This elegant piece was the result of a simple and nonspecific request "300mm Sujihiki." The handle is a Wa/western fusion sculpted of the finest Cocobolo. This transitions into a beautifully blued integral with an exhibition fit-up.
A sujihiki that boasts an incredible length. The blade and spine are forged a bit thicker for extra stiffness and weight, so don't expect a crazy amount of flex out of this one. You of course have all the rounding and creature comforts you'd expect on a knife of this caliber. The sujihiki still has a 7.5-1.5mm taper, so the tip is quite thin.
The C105 steel used in Williams knives is very pure, and when water quenches gets exceptionally hard (65HRC). The edge that can go on a Catcheside knife is wicked, and they have good edge retention. This is one to bust out your best J-nat for. All given factors will culminate in an effortless slicing experience.
