William Catcheside went above and beyond with this forged geometry gyuto. This elegant piece was the result of a simple and nonspecific request "240mm Gyuto." The handle is a Wa/western fusion sculpted of the finest Cocobolo. This transitions into into a beautifully blued integral with an exhibition fit-up.
The blade itself is perfectly balanced for those drop through cuts we all desire, and the forged geometry is designed for superb food release. This knife has a consistent 7-1mm distill taper; the tip of course being thin enough for those cross onion slices, assuming it is wielded with the skill necessary. The knife impressively light for its size. It is quite thick at the heel, but has a very thin lower geometry.
